I assume you will leave the doors that are natural wood color alone?
For trim paint (baseboards, door frames, window frames) we like Benjamin Moore Super White in a satin finish. Satin is a bit less shiny than semi-gloss and looks better.
For ceilings Benjamin Moore makes a special ultra flat ceiling paint.

A few suggestions: Monterey White, Stonington Gray (we have this color in our stair hall), Wickham Gray. Farrow and Ball has great colors - it's a more expensive paint, and definitely not worth it for what you are doing - but sometimes you can give a paint dealer one of their color chips and they can match it in another paint. We have their Cornforth White in our living room.
